Because even with perfect parents, it's not a guaranteed recipe breed. A 'grade' horse is a horse of mixed ancestry of four or more breeds where one doesn't stand out more than the others. In other words, you're creating mutt horses. :D

Check your parent horses against the breed req's you want to make. The closer they are to the breed req's, the better chance you'll get. Plus, double check to make sure the recipe horses are correct. One mistake I keep making is the NORTH african barb is So Not the WEST african barb.

If you need some more in-depth understanding, there's a long descriptive-reading you can delve into, to further understand how to read your parent breeds and where they might be going wrong.

Black Oak is right. Here are some more tips:
1. If you go to the market, and click "Book Store," you will find a whole slew of evaluation books. These are very valuable in trying to create a new breed. You have to buy the one for the breed you are trying to create, and test your horses (all of the ones you are using to create the new breed) with it. If you get a five-star evaluation, keep that horse. Four-star evaluation, still keep that horse (especially if it is the height that is not starred). Three-star evaluation, it's up to you, but I would not use that horse. Two-star evaluation, I would definitely not use that horse. The best is obviously the five-star evaluation, but four-star/ three-star sometimes work. They are just more difficult.
2. I know that to create a breed, it says you have to have, for example, "Arabian + Westphalian." This DOES NOT mean, if I remember correctly, that you have to have 50% Arabian + 50% Westphalian to create the breed. You can breed them to any other Arabian or Westphalian to raise their star evaluation. Therefore, the winning combination could end up being 81% Arabian + 19% Westphalian bred to 23% Thoroughbred + 77% Trakhener to create, for example, the Hessian Warmblood. Thus, you do not have to throw away three-star/two-star evaluated horses! Just breed them out to get a higher evaluation.
3. Finally, it just takes luck. Even if you have 2 five-star evaluated horses, that does not mean you are guaranteed the new breed, sadly. It does mean that you should get it a lot more quickly though. =)

Hope this helps.

Okay, so you're attempting to make the Calabrese.
Your aim is a tall, medium light to medium outcome.

You're most likely sticky problem is height. Has your foals been popping out shorter? If they are and you have a backup stallion that's taller, even if he's outside of the req's try him instead. She may like to throw around shorter-than-her offspring. You want her to offer offspring that will be her height or taller. Also, with the thoroughbred background, she may favor throwing lighter foals as well. So take notice of that in the foals and see if she offers a mix or likes the lighter ones.

Your newborn height should be somewhere between 10hh-11.1hh

The stallion has a similar problem as the mare, being of arabian blood, there may be a very heavy tendency to throw around the lighter size and types.

Calabrese doesn't come to mind to have been too difficult of a problem for me, but I likely went into it knowing the thoroughbred and arabian desire for light-weight and probably leaned much more toward the heavier ones, maybe just outside or just inside the upper tier of the calabrese req's.

So did I come close to what your foals generally pop out as?
