There are three types of dapples in this game (at least so far): the graying dapple (caused by the graying gene; the silver dapple (only affects black coats); and the sooty dapple.

Your best bet is to go for the sooty dapple. Silver dapple won't dapple any other color than black.

If that's what you figured out, go for it!
My notes (almost nonexistent on sooty, other projects are in front of it), says only that the dappling effect for sooty is carried in two AC breeds that doesn't often appear to carry much or any sooty at all. But also that there is about a 25% chance of acquiring one with it, so they might be considered uncommon but not rare.
