Any suggestions on training ?

Ok so i have this fully( Quinzel) with awesome stats . I joined long ago but never played till tree weeks ago. I was wondering how to train her as good jumping horse or , in alternative , a dressage horse . What stats do i have to improve for that ? Is It good to work till is tired ?
