There are two ways you can check out what they'll be 'best' at... of course, that doesn't mean they'll actually be any good in actual competitions. The most straightforward way is to just give them a try.

What Discipline Is My Grinder Horse? - This guide focuses on body form and should get you decently close to which discipline should be right. Although it's designed for grinders in locals, it also has a use for horses in hosted competitions.

Discipline Potential Evaluation - if you can use google spreadsheets, this one will give you hard numbers about your horses' disciplines.
