Other than that, for your first real project, aim for something that's easy and straightforward. Like chestnut Ardennais. Breeding is a big part of this game, but you can certainly get by with little or no breeding at all.
Remember breeding to create new breeds, the foals will pop more often correctly when they're closer to and within the req's of the new breed. But there's still no guarantee they'll be the correct breed even if the foal is perfect for them.
Finally, to breed toward a competition horse, the most basic advice on this is: Take your best competitive horse in a singular discipline of choice and breed it to your second best in the same discipline. By doing this repeatedly, you will eventually get a bloodline that's quite successful in that discipline.
If you treat breeding here like you might in real life, you'll get to where you want to go. I.E. keep the foals that have the desirable traits you want and cull all others.
And one final thought: The rehome button is your friend.
