On the subject of pathways... having a gallop track and/or some cross country jumps that we could set up as decoration would be really cool! Other items like trot poles, cavalettis, barrels, pole bending poles etc or maybe decorative arenas of different sizes/types (with customizable footing?) would be amaaaazing visually

Maybe someday they will but for now it seems like too big of a project to custom make huge buildings and tracks maybe they can do that for like "event" buildings so like you can only get them for a limited time you get what I mean?
