Also, is there some way you can view like the color genes and stuff or do you just eyeball it :lol:?

It's not a glitch just a cool color ^-^
Sadly no, but you can eyeball it based on Pedigree and your ending product.

In case you were curious, the horse is chestnut with the "top-down" version of sooty. The sooty in this case will start along the top line and progressively darken the horse from the spine down.
