Honeyeye is Flaxen Gold Champagne with a single Tiger Eye and Appaloosa Spotting. Her color will change as she gets older because of the appaloosa spotting - she will likely varnish which will look like cloudy white spreading over her coat, and could have Lp sooty which will make her darker and sometimes causes parts or all of a horse to look black.
(Chestnut + Champagne + Flaxen + 1x Tiger Eye + 1x Lp)
Snoweye is Classic Cream with a single Tiger Eye and Appaloosa Spotting. She is already showing her appaloosa varnish though it could still get more intense as she ages.
(Black + Champagne + 1x Cream + `1x Tiger Eye + 1x Lp)

I think genetically the tiger eye and the hazel found in Champagnes are different. Not sure how horse world factors it in. It would be fun if you could buy a genetic test in Horseworldonline to verify our thoughts. LOL

On HWO champagnes will have normal brown or blue eyes at adult-hood if they do not have tiger eye. One tiger eye gene gives them the hazel color.
