I was looking at horse rankings and it said score and had a percentage. How is the score calculated and what is it?

That score is each individual's highest show score in a given discipline. It defaults to dressage, which is scored as a percentage. If you change the event you'll see different scoring systems, like cows penned for cutting or time for racing.
