Horse sale- Is there or will there be a quick sell option for your horse? So you'll sell it to the game for a set price instantly rather than having to wait for a player to buy it?

No, there is no quick sale option. If the horse has no children you can Rehome them (delete them) but currently you don't get any money for this. Horses which have children can't be deleted because they would break pedigrees.
