In his last few years he has begun to turn dark grey in some of the areas he is varnishing. I have no idea if this is just a normal type of varnishing or something else. Any help would be greatly appreciated!

Looks like normal varnishing, with maybe some sooty playing in. ^^

Yeah, I love it when the varnishing starts getting dark like that! I've seen some really cool expressions of that sort of color change, especially in very old horses.
