Bit of a sad topic here...
I have a 19/20 year old mare and I was wondering if she’ll pass away on this game. I know that horses in real life pass away at around 30 (I have horses of my own in real life so I understand all of the signs etc)

Yes, they die. But only of old age, currently.

"Currently" is true for now, but Admin may change policies/practices at any time. So far the care the horse receives and condition it is in do not seem to affect its fertility, performance in shows, or longevity. (Foals are always born in "Poor" condition regardless of the dam's health.)
The art in this game is very attractive. Part of that is that most horses look healthy. A practiced observer can distinguish "thin", BCS 3 or less, from "fat", BCS 7 or higher, but it's subtle. A glossy coat is the result of training, not nutrition, and it stays with the animal for life.
Any non-pregnant horse can die at age 19 years 0 months or higher. This seems to happen by simple chance unaffected by breed. There is no visual indicator of advancing age other than, sometimes, coat color change/s, and that depends on color genetics as well as the passage of time.
In-foal mares will always complete their pregnancies and give birth to one healthy foal. If the mare is over 19, she may die on the day the foal is born. Some are lucky. I have a 30-year-old retired broodmare, and I have seen a few mares who are/were over 40.
Before the new parameter taking 10% energy from both mare and stallion upon (the day of) breeding went into effect, there were older stallions posted for breeding; I even saw a 30 year old once. As I wrote this, there are 213 between ages 21 to 25, but none older than 25.

One of MY horses just passed on/retired. All I can see when I click on her profile is just a picture of her. (She was for sale in the horses for sale market, and I hope her previous owners don't get mad...)

I am new to the game and I am very confused. If horses die in this game does that mean they are completely gone? Or do they stay in your paddock/pasture/barn? Also is their a way to stop them from aging? I really don't want to lose any horses. :/

They "retire." That means they do leave your pasture. However, if you check the pedigree of some of their foals, you will be able to see their show record, pictures, pedigree, and progeny. Sadly, if you want to stop your horses from aging, you can't use any turns on that account. If you use turns (necessary for pregnant mares to have their foal), your horses will retire eventually. You can make a new account though for horses you don't want to age and don't use any turns on it. Hope this helps!
