So, this is one of my first horses that I adopted, and I'd just like to know his colors and markings please.

If I have to guess (and I really don't know genetics just starting out to learn) I'd say he is a Bay; Minimal Blanket Appaloosa with Birdcatcher spots? And his mane.. is it Flaxen with silver? Oh, I don't know I have no idea what I'm talking about, lol.

And then I bought this Mare, is she a Red Roan with Birdcatcher spots?

On this game, there are no birdcatcher spots (yet). Any spots or splotches that you will see are entirely related to leopard pattern genes (or possibly dapples).

Your stallion appears to be flaxen red dun pangare with snowflakes (the tiny flecks) and a blanket.

Your mare appears to be red roan pangare with snowflakes.

It is possible for your stallion to be bay with leopard complex, however, he doesn't appear to be varnishing correctly for a bay. Bay's generally varnish toward the gray scale, loosing their brown colorations rather quickly.

Pah!, I completely got it wrong, I guess it's gonna take a much longer time for me to learn the genes and colors, simply guessing by a horse pattern and coloring guide, is not gonna help me, lol.

It takes time to recognize the colors. I still get my dilutions (cream, pearl & champagne) wrong. However, I also don't work with them.

To begin to strengthen your identification skills on colors, try to work with one or just a couple for awhile. You'll begin to pick up on exactly what markers mean what colors. If you go that route, it won't take you long at all.

As an example, take a look at these two studies I did, it may offer you more understanding into the colors, how they interact and also the range they can offer.
