Phenotype Influences Performance?

Does the way a horses looks in its image actually influence/reflect its traits (speed, balance, etc.)

Yes absolutely.
Horses which are bigger and heavier will naturally be stronger. Lighter horses will naturally be faster. Long sloping shoulders are better for increased range of motion (movement). Powerful hindquarters, such as on a quarter horse, give a boost in both strength and speed, etc.
Many of these have already been decided upon and programmed in but some of the genes still need data entered for how they will effect the athletic ability. They will all be completed before the game is opened though.

How many traits actually influence performance? I imagine ear shape and tail thickness don't do much of anything, for example.

You are right ear shape and tail thickness don't have much impact on a horses performance :)

The main traits that effect performance so far are:
Height
Temperament
Build
Type/Proportions (Horse vs Pony)
Age
Shoulder Slope (2 genes)
Haunches (3 genes)
Back Length (1 gene)
Leg/Bone Thickness (1 gene)

We have immediate plans for a few more genes in the neck, chest and legs. There may be more genes added before launching too.

I'm guessing (from the demo):
Shoulder Slope: Withers and Point of Shoulder
Haunches: Hip Length, Hip Angle, Stifle Placement

Would depth of flank and rib cage also influence something?

You've got it, and yes Depth of Flank and Rib Cage will also have effects. I missed them in my last post.

I'm not sure what you are asking. The height slider in the demo ranges from 40cm to 220cm (about 16" at the tinest, to abut 21.2hh at the tallest)
