How to cull down horses

So I've started breeding Arabian's, and most have 4*... Is there any way to cull down based on the horse, other than how many stars it has?

If you breed for another breed you can cull down horses by getting rid of horses with less than x amount of stars for that breed.

Sporting ability, color, conformation...there are any number of things to judge a horse on besides its breed evaluation.
Signature? I don't need no stinkin' signature! Everybody knows who I am already!
