Not sure what it means when someone says 4* horse, or something like that.
Also when evaluating horses, what are you looking for in the 'results'?

When you evaluate a horse for breed, a star is displayed with the characteristics your horse has that match the breed you are evaluating

When you evaluate a horse for a breed the 4* is the top part of that section next to Horses Basic Physique. It's short-hand for Stars (cause we're lazy). A horse could be awful for that breed and show up as N/A and have no stars. Or be 1-4 stars. It's just an overall evaluation of your horse for whatever breed book you chose.
The rest of the evaluation depends on the breed and whatever your personal goals are. This is the specific part that the 4* or whatever doesn't explain. I am working on Akhal-Tekes for example so I have that book and evaluate Arabians and Turkmenes for how good they rate towards Akhal-Tekes. Plus when I make an Akhal-Teke I evaluate it to see how well I did or if I failed and made a cross-breed (or unexpected breed!) see what I missed - was it too short, too tall, too fat, etc.

So what actually makes them that breed? For example I bred a few foals for Exmoors, but they all so far failed on the height so only got 3 stars, is this why they don't show up as Exmoor and only crosses?

That's correct. A foal must meet the bloodline requirements (one Przewalski parent and one Tarpan parent for an Exmoor) and all the physical attributes: size, heft, and type.
Signature? I don't need no stinkin' signature! Everybody knows who I am already!
