There is this thing called up for bids only and that will prevent anyone you do not want buying your horse to get it.
You can not steal a horse in this game and you are frankly being extremely rude when you should have asked very nicely if the buyer would consider selling it back to you even though you made the mistake of putting it up for public sale.
