You'll train him up faster if you first focus on stamina training (that allows you to do much more much quicker and with much less fatigue). Then the rest of the training goes decently fast. If you want in-depth information, take a look at DWM Horse Training Guide in the help guides forum. It offers a little more breakdown of how to train up quick and efficiently.

In order to change temperament, you may need to put him in a barn to control exactly what he eats. Give him corn enough to fill his sugar intake to about twice his needs. If his temperament can be moved from bombproof to high strung (or somewhere in between), it should start to happen in about a year (give or take a few months). But temperament is restricted on what he was born with. Some horses won't change temperament.

As far as being good in many sports, that will be up to where his talents lay. You'll have to try him in everything you want him in and see where his talents are.

I've just had a look and you need to sort his feed out. His regular feed should never exceed his max feed so reduce the performance mix down to just under his max. Don't mow the pasture and his weight should start improving. As the grass in the pasture grows keep an eye on him because you may need to reduce the performance mix further. If you want to try and get him highly strung then at about 18 months put him into a barn and feed him corn, always remembering to keep his feed below max. Other than that follow black oaks advice and you should be alright.
