As for your horse's colors, see the following.

Jacky = Bay Dun with Lp (Lp is leopard complex)
Daylight Dream = Classic Champagne with Lp (other genes may be hiding under the Lp)
Phoebus = Bay Pangare Tobiano (appears may also have dun) with sooty
Pink Dart = Flaxen Chestnut Pangare (appears may also have dun) with sooty
Windstrung = Too young to determine exactly but definitely a bay or brown

*Noting that any markings like stars, socks and large patches are all directly related to Tobiano
