She looks so cool but I have no idea what her markings are.

This coat color is called Greying Chestnut. She'll continue to grey out untill becoming fully Grey.

I'm also confused about this stallion and his genetics if anyone wants to give them a look.

He is indeed, a graying bay. Rather more of a Gray now.

Anyway, he has just one gray gene, meaning it's a 50/50 for him to pass it onward. But as far as is other potential color genes are...

E/? - this is extension. He could have two of these, meaning all of his offspring will always be blacks and bays/browns, or just one of these, meaning he could also through chestnuts, with appropriate mares.

A/? - This is agouti. Agouti is responsible for wild bay, bay and brown. We know he has bay. But he may have either another bay or a brown, or not. We can say he Does Not have a wild bay. This is because the dominance goes --> wild bay over bay and bay over brown. Since he's a Bay, he can't be hiding a Wild Bay.

This just about satisfies his color gene capability. The only other thing he could be hiding is Tobiano. However, it would take a generation or two to see if he had any of that and just what it may or may not be. It's unlikely or rather very low chance of any of his daughters or sons of showing any To. But that doesn't mean that none of his descendants will ever show any. Depending on who you breed to and what genes they have, it's possible for a foal to pop with some loud Tobiano marks.
