Yeah, they'll do this. 
It's quite an interesting change, isn't it!
As another interesting note, you can breed for varnish changes as well. You can aim for really strong and really quick changes (changing to look like this in as little as 5 years... ish) or for really gentle, nearly nonexistent changes, so that even when the horse gets really old, they seem to've not varnished hardly at all.
And of course, everything in between.
It's quite an interesting change, isn't it!
