Set some goals. Like say all foals must have 65k HGP, a pinto coat, ect.
Then rehome any that don't meat that.
Now set more standers-
70kHGP
Pinto pattern
At least 1 sock
50 speed
20 strength
30 stamina
Ect.
Soon you can up your goal to something really cool like
60+ speed, 30+ strength, 40+ stamina.
Pinto pattern with a face marking and a sock.
With a fluffy mane (or mohawk mane)
Ect.
It's whatever you want to set your goals to. Just remember to start low (step 1) to work up to harder ones (step 10)
