What color is she, and is the color easy to breed out? Is it dominate or recessive?

Pangare is a gentle expression, but the type that covers most of the body (think our pseudo-pink horses).
Sooty is from the top down, that's why the red coat appears so dark rather than brilliant. But the sooty is entire-body style, so it's tainting the pangare quite a bit.
Unknown pangare, could be hetro- or homo-.
Sooty is debatable as well.
Flaxen is homo-.
And chestnut is homo-.
So it's the same as in this line. It's just marrying the sire's pangare style with the dame's sootiness.
If you want to remove the type of pangare or the type of sooty, you'll need to breed out to the type you want (half and half sooty or pangare only on the bottom, like the dame, etc). Or breed to another color and style entirely. A bit unknown whether you'll get agouti or black if you breed out though. Chestnut hides agouti quite well.
