What and how to feed my horse?

I am wondering the preferred weight/temperment for an In Hand jumper/Show jumper/Hunter horse. I have one that will be one of the three, this will help me make a decision bout it.

Best option looks to be moderately thin and even.
In-Hand is mod-thin (unknown temp, but likely even).
Show Jumping and Hunter are mod thin to mod and both even.
