You can, theoretically.
A pseudo-white is a triple dilute horse. You have double dilutes. In order for you to produce pseudo-whites, you will need to add champagne into your cremello herd. You will produce a horse that is Cremello Champagne... and then you favor the foals that are brighter and whiter than the others. That's because the shading of the base colors and the shading of the other color genes has a range 'bright' to 'dark'. Then... of course there's the sooty, the dun, the pangare... All of these genes can affect your color work. But the base genes needed for pseudo-whites is a triple-dilute coat (two creams and champagne, two pearls and champagne or a cream & pearl and champagne).

Champagne horses will always have freckles. If there's no freckles, then it's not champagne.

In addition. There are a couple different ways to achieve pseudo-whites outside of a triple dilute, but it's quite a bit harder to achieve. That will require extreme dun and pangare and paired with some sort of extreme dilute (champagne, cream, pearl).

Finding pseudo-whites on the market isn't too tough at all (these are red based or black, but don't show any agouti they might have). Here's a short list of at-sale currently:

However, breeders of these... I know there are those that do, but remembering every account's production is a difficult task. None come immediately to mind but that's probably because I have Lp Tb club horses filling it.
I could recommend taking a look at other possible sales from the owners of those above, or inquiring directly.

You could also ask on the chat for any breeding stables with stock to sell... I think you've already done that at least once.
