It depends. Temperament can affect how well a horse does in shows. If you want to do things like racing you'll want a high strung horse but other disciplines that require a calmer horse will want calmer temperaments.

As for more generally what bombproof means, it basically comes from saying a bomb could go off next to the horse and it wouldn't spook or freak out.
