Unfortunately no. Only new horses will carry the new genes.

Is it obvious which horses in the adoption center have the LP gene or no? Because, I've been looking and haven't seen anything with spots. :/

Most likely the horses with LP have been adopted. Every time a horse is adopted a new one is added. Only the horses with LP will be obviously spotted. There is no obvious way to tell which horses have hidden spotting genes. All breeds do have some of the genes though.

Can you breed the new ones iwth the old ones and get a pattern?? or does it have to be new and new?

You can still get patterns by breeding the new ones to the old ones as long as you're breeding a new one with the LP gene. You'll just get very minimal patterns because the old horses don't have any of the pattern genes to pass on.
