I have a mare that I adopted and don't know what colour to class her as. Her name is Burning Blaize, and here is the link to her paddock hopefully.

Yep, you've linked her paddock! All horses also have a separate profile page. Instead of clicking on view when in the paddock, click on the plus next to it.
I would call her an extreme sooty buckskin. I don't see any evidence of dun, but I may be wrong.
