What makes a grade horse? I was trying to look on the breed list but didn't see it.

A grade horse is like calling a dog a mutt.
It's a random mix of breeds with no singular breed large enough to overrun the rest.

Oh. Well, drat. I wanted to make my own line of them but didn't know where to start. So it's kinda a shot in the dark?

It's actually quite easy, take two mixed horses (of four different breeds) and breed them together, it should pop out a grade. If you're staring from AC horses, the 50/50 offspring of purebreds, when crossed with another 50/50 of two different breeds should offer you a grade horse.
