Congrats on attempting to figure it out! Even if you didn't get there. :mrgreen:
It's a long, learning curve for all of us, so don't feel too disappointed. My suggestion is to start with the basics (red and black) build on top of that (agouti which is wild bay, bay and brown) then start adding in (dun, pangare, etc.) and leave for last the dilutions (in this case we consider these to be pearl, cream and champagne).

She is a silver buckskin.
Her mane and tail, even as a newborn, is silver in color, this indicates the silver gene. You won't be able to tell just yet, but her base coat is a bay plus she has the cream gene (the yellow coat), this tells me she's a buckskin. And (quite obviously) she carries tobiano. Tobiano is the only paint markings we have yet released into the game and is responsible for any paint markings as well as all facial and leg markings (stars, stripes, socks, etc).

not exactly sure what color she is she started out looking like a black like mom and ended with this brown on her belly.

She's Brown + 1 cream = Smoky Brown (with white markings on her legs).

I would have said double cream + champagne but the eyes are dark and he was born with light eyes. So, definitely champagne, looks like maybe a bay-base or brown-base but he's too light for a regular amber champagne.

So, could be brown + champagne + cream (sable cream), could be black + silver + champagne + cream (silver classic cream), could be bay + double pearl + champagne (amber pearl). Easiest way to tell is to breed him to a couple of chestnuts and see what the foals are like.
