Dominant genes can be turn recessive and show up at a later stage. She would carry the gene but not display it.

The first link is only when trying to determine which genes are dominant vs. recessive. That one doesn't really apply here, seeing as we already know based on the game's already-stated features that cream is dominant.
The second, and more specifically the part you're talking about, is when other genes/environment come into play, or there is a mutation in the genes. Both of which are completely irrelevant here. Also, dominant genes never 'turn' recessive. They just get covered up by a different gene or it didn't get passed on to begin with (the offspring only carry it because there was a mutation that caused it). And what's more, is the chances of what you're saying, in relation to coloration anyway, occurring in real life is extremely unlikely.

I think for Cream, this isn't the case. If I'm reading this source correctly, it's only SLC45A2. I also found no mention of Cream dilution depending on more genes in other sources. Though I must add that I'm not a biologist, so I could be wrong.

The other possibility that your links talk about is mutation or some epigenetic process. These are very unlikely and cannot be relied upon for breeding. I also doubt that they are coded in the game, colour-wise. I've never seen a horse here with a coat colour that couldn't be explained by its pedigree and without mutation.

Quite possibly. I'm just thinking of it in the way that I've always interpreted it. I actually posted a question there about it, since it would be great to know, so if I get a reply to the question I'll put a link on here.
Thinking on it now, it is very unlikely that it will happen in the game. After all, why make a game that advanced in coat genes when, chances are, most playing either don't know or care about it and it simply makes things complicated.
PS: aren't horses just such funny things? I mean really why are the dilutions dominant? In everything else (that I am aware of) it's the darker colours.
