Boarding is certainly a solid way to start out. It will also help you get the lay of the land and certainly help you see the different styles and types of horses that HWO has to offer. A good simple breed is any breed that is easily obtainable. I'd suggest you start with an AC breed that can easily double as a beginner bloodline. For that, Arabians are usually a good-enough go-to. But you can also start with Thoroughbreds, though they aren't AC, they're relatively easy and cheap enough to acquire.
You could also go with the in-hand jumper style breeds, AC offers shorter breeds to start in that area as well, shetlands, caspians, tarpans and Przewalski. Although the tarpans and prze breeds will need to be bred into slightly smaller stature before they can regularly compete.
If you don't have a specific goal just yet, there is a million (sometimes it certainly seems to actually be that many) to choose from.
I always suggest giving a go at the recipe quests when in-between goals or when you're unsure of what goal you want to tackle next. Very often, as those recipe quests are run through, you'll find yourself quickly attracted to some breed along the way.
You can also check out the quicklinks in my signature, there's a lot of information there, much more for overwhelming a newbie then I'd every suggest tackling at once.

But intermixed in there are some topics that tackle and cover some projects that might interest you, some of them are color topics, others are breeding projects and it doesn't take much imagination to come up with other ideas from there.
So if you have an idea, or come up with one and need some more help to turn it into a goal, the community is around to aid with that.
